Honey and Fig Icecream

Enjoy the luscious combination of sweet figs and honey in every spoonful of Fig and Honey Ice Cream. The fruity and floral notes, along with the creaminess of the ice cream, create a dessert that's both sophisticated and utterly delightful.

Serving: Approximately 1 litre

Ingredients:

  • 1 pound fresh figs, stems removed and diced
  • 1/2 cup honey
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

Prepare the Figs:

  • Wash the fresh figs thoroughly, remove the stems, and dice them into small pieces.

Create the Honey-Fig Mixture:

  • In a bowl, combine the diced figs and honey. Toss to coat the figs evenly with the honey.
  • Allow the honey and figs to macerate for about 15-20 minutes, allowing the flavors to meld.

Blend the Figs:

  • Transfer the honey-coated figs to a blender or food processor.
  • Blend until the figs become a smooth puree. If needed, add a splash of water to help with blending.

Prepare the Ice Cream Base:

  • In a separate mixing bowl, combine the heavy cream, whole milk, vanilla extract, and a pinch of salt.
  • Mix the ingredients until well incorporated.

Combine Fig Puree and Ice Cream Base:

  • Add the fig puree to the ice cream base.
  • Gently fold the fig puree into the ice cream base until it's well combined.

Chill the Mixture:

  • Cover the mixing bowl with plastic wrap or a lid.
  • Place the mixture in the refrigerator to chill for at least 2-3 hours, or until it's thoroughly chilled.

Churn the Ice Cream:

  • Once the mixture is chilled, pour it into an ice cream maker.
  • Churn the mixture according to the manufacturer's instructions until it reaches a soft and creamy consistency.

Transfer and Freeze:

  • Transfer the churned ice cream into an airtight container.
  • Press a piece of plastic wrap directly onto the surface of the ice cream to prevent ice crystals from forming.
  • Seal the container with a lid and place it in the freezer to firm up for at least 4 hours or overnight.

Serve and Enjoy:

  • Scoop the Fig and Honey Ice Cream into bowls or cones.
  • Garnish with additional diced figs or a drizzle of honey if desired.

Variation:

  • Nuts and Spices: Add chopped nuts (such as pistachios or almonds) and a pinch of ground cinnamon or cardamom to the ice cream mixture for added texture and flavor.

Tips:

  • Make sure the figs are ripe for maximum flavor in the ice cream.
  • The plastic wrap pressed onto the ice cream's surface helps prevent the formation of ice crystals and maintains a creamy texture.
